After an unsatisfactory third-party inspection, there were multiple corrections needed. One violation was for an unclean slicer. While it was clear attempts had been made to clean the slicer, it had food debris underneath and was not ready to be operated. We decided to purchase a protective cover (well spent dollars) for the slicer. The staff was trained to cover the slicer only after it was ready to be safely used. Training included proper PPE and having an uncluttered workspace. Covering the slicer also ensured that no debris would accumulate on the machine during down times.
