Developed a document for Traceability assisting in the managing of the Food Safety Management System (FSMS)-
We perform a weekly check on one product/core ingredient from the delivery stage to serving stage on site here at the hospital.
This is our management validation step, this effectively is “checking the checker”. We record into this document snippets form all the digital records pertaining to that product/recipe, ie delivery/cooking/hot holding- from times, temperature’s, user names, management verified and corrective action. We also track the allergens and the confirm ingredients as a whole of the recipe in question. This document is sent to head chef, general manager and safety specialist with nots or findings for improved measures. This is then filed away for future reference checks. We also use this document for communication to the EHO, external auditors or clients of the robust nature of you system and on occasions can follow back a potential food safety claim

Outcome:
External auditors & EHOs have all commented on the presentation and easy of understanding the information as excellent. We have a high rate on record keeping & up to date records due to this added check. it also offers an excellent way of feedback both personally and it tests the system
